Maple Syrup

There are four grades of pure Vermont table syrup, ranging from the very light
colored Fancy to the dark colored Grade B. Generally speaking, the lightest
colored syrups are made at the beginning of the season when the weather is
coldest. As the season progresses and the temperatures become warmer the
syrup becomes darker. All grades have the same density or thickness, and are
made to weigh 11 pounds to the gallon.

Vermont Fancy Grade:
The lightest in color and the most delicate in flavor.
The delight of native Vermonters and connoisseurs of maple syrup. Great on
pancakes and ice cream, and foods where the delicate flavor can be appreciated.
But if you desire a definite, strong flavor, this is not for you.

Grade A Medium Amber:
The most popular grade for all around use. Medium
in color and flavor If in doubt which grade to try, order this one!

Grade A Dark Amber:
Darker and stronger than Grade A Medium Amber.
If a definite, strong maple flavor is preferred, this is the grade for you.

Grade B:
The darkest and strongest flavored pure maple grade of all. Usually
made at the end of the season, it is excellent for cooking purposes, although
some folks choose it for their pancakes!
